Have you ever wondered why when we freeze - that is for those of us who are Diasporans - pumpkins seem to do magic to our system?? For those who love to keep nice and warm here is our favourite recipe for Pumpkin Soup. It is such an easy recipe and we promise you will love it.
Peel the pumpkin and cut it into big chunks, chop the coriander and place all the ingredients in a large pot.
Cover the pumpkin with water and put 4 cloves of garlic. Boil all the ingredients for 45 minutes. Put only 1 beef or chicken stock cube into the boiling pumpkin with a pinch of salt.
After 45 minutes, turn the stove off. Enjoy your soup with brown bread. Let me have your feedback after cooking the pumpkin soup.
