RECIPE: Mukimo - When You Care To Cook Authentic Dishes

Being away from home can be challenging when it comes to eating those authentic dishes. The taste buds can also play a major role in one's life. We always want to feel at home wherever we are, around the world. I assume a woman carries her special authentic dishes with her. She will always try to fit in any community and blend in with the cultural differences. One thing for sure, women go an extra mile to cook food that brings them back home to their roots. They implement the resources and ensure that the kitchen portrays their motherland. The authenticity of foods is very important in a woman's kitchen.
Growing up eating one of the loved foods in East Africa was something that I vividly remember up to now. I have come up with my own recipe for cooking Mukimo and my children love it so much. Mukimo is traditional food that most people from Central Province of Kenya eat. It is basically a mix of potatoes, and green vegetables mashed. It can be eaten with beef stew or chicken stew.

Ingredients
Tomatoes
1 beef cube
How to cook
Boil potatoes, green peas and sweetcorn until tender. Strain the water, put some butter and mash.
Chop two onions, and put some oil on a pan. Fry the onion for 2 minutes and put the mashed potatoes, sweetcorn and green peas. Mix well with the masher.
Boil your chopped beef and fry with tomatoes and coriander. You can put 1 beef cube if you wish.
Serve and enjoy a bit of authentic dish while you are away from home.
